I have heard of this wonderful thing called “overnight oatmeal” but I hadn’t tried it until just a little while ago.  Now I’m hooked!  I prefer to make it with buckwheat groats because I’m not really into the texture of oatmeal on it’s own, but you can substitute oats if you prefer.

Meatless Monday – A Delicious Twist on the Traditional Potato Salad

The best word to describe this salad is ‘refreshing’. The lemon and dill in the avocado dressing complement the crispy roasted potatoes perfectly. You can boil the potatoes like a traditional potato salad, but I promise that roasting them will be worth it!

The first time I tried to make this recipe I was new to vegan cooking so I tried to use whole flaxseeds instead of ground flaxseed. Needless to say, it didn’t work out. But after trying it again with the proper ingredients these are a savoury, protein rich pancake breakfast for the busy day ahead.

Meatless Mondays – Quinoa Molasses Bread

I’ve been experimenting recently with molasses in cooking and baking because of the high iron and calcium content. This savoury, flavourful bread is delicious with soups and even just with a small bit of vegan margarine on a warmed slice for breakfast. The recipe is from Donna Washburn and Heather Butt’s cookbook, Great Gluten Free Whole Grain Bread Machine Recipes. I’ve altered it slightly to have it as a regular recipe, for those of you without a breadmachine.
