I haven’t ever thrown up a green smoothie for my Meatless Monday posts! Silly me! The following recipe is taken from “The Juicing Bible” by Pat Crocker and Susan Eagles. If you’re looking for a juicing book, I’d absolutely recommend this one. The variety in here is fantastic!
1/2 cup soy milk or almond milk
1/4 apricot nectar
2 cups washed fresh spinach (if using frozen, reduce the amount of soy or almond milk to 1/4 cup)
3 tbsp wheat or barley grass
1 tbsp pumpkin seed protein powder
Using a blender, process ingredients until well blended. This smoothy tastes only a little “green” and for the most part the “green” taste is covered up by the apricots.
