I have heard of this wonderful thing called “overnight oatmeal” but I hadn’t tried it until just a little while ago. Now I’m hooked! I prefer to make it with buckwheat groats because I’m not really into the texture of oatmeal on it’s own, but you can substitute oats if you prefer.
Makes 4 servings
2/3 cup buckwheat groats
1/4 cup chia seeds
1/2 cup raisins
1 tsp cinnamon
1/2 tbsp brown sugar (optional, or can be substituted with honey)
2 cups almond milk (or non-dairy milk of your choice)
1. Place all ingredients in a serving bowl. Stir to thoroughly combine ingredients.
2. Either place in the fridge just like this, or portion out mixture into four individual containers for easy breakfasts on the go.
