Meatless Monday – Gluten Free, Vegan Overnight Oats

I have heard of this wonderful thing called “overnight oatmeal” but I hadn’t tried it until just a little while ago.  Now I’m hooked!  I prefer to make it with buckwheat groats because I’m not really into the texture of oatmeal on it’s own, but you can substitute oats if you prefer.

Meatless Monday – Gluten Free Waffles

There are a number of packages of gluten free waffle and pancake mixes available, but as the gluten free lifestyle continues to grow and develop it’s “fad” status, more and more heavily processed options are available to purchase for much more reasonable prices than before.  The sugar/carb content in some of these products is completely off the charts!  Not to mention all the preservatives and whatnot.  I am always looking for the healthier alterantive, but also without taking any more time.  With this recipe I think I’ve found the perfect balance between convenience without sacrificing taste.  I started out with a recipe from food.com, and it took a while, and I had to scrape out the disasters from my waffle pan many a time, but this recipe is fool proof! Meatless Monday – Tropical “Meatballs”

I used to love this dish as a kid, mainly because I could drown the meatballs in sauce and rice and try to forget that I was actually eating ground beef.  But I’ve brought it back with a vegan twist!  Plus, it’s easy as pie to make, especially if you already have the “meatballs” pre-prepared and frozen.

These are so simple to make and store well for future lunches and snacks. Just make sure that the rice papers dry enough before you stack them, otherwise you’ll end up with a big gooey mess!

Meatless Monday – Love It Lentil Loaf

‘Loaf’ is a bit of a misnomer.  But I don’t have anything else to offer in its place.  This undefineable meal is very hearty and very filling and packs a whopping 12 grams of protein per serving!  It’s great on it’s own, over pasta or rice, on toast, or on crackers.  Just as the title says, you’ll love it!

Meatless Mondays – “Meat”-balls

There is absolutely no trace of any kind of animal product in these little treasures, but even those meat eaters in your family will enjoy them!  I fed these to my brother in law who is very much a carnivore and he even went back for seconds!  I adapted the recipe a little and added the egg substitute just to help bind them a little bit better and it definitely does the trick.  Unlike other “meat”-balls I’ve tried, these actually stick together.
