Meatless Monday – Quinoa Salad

I like being able to pull a meal together based on what I have in the fridge.  There’s something very satisfying about being able to pull something together at the last minute without having to run to the store.  It’s even better when the meal turns out to be exciting and delicious!

Makes 4 servings

3 cups cooked quinoa
1 cup chopped cucumber
1/2 cup grapes, cut in half
1/4 cup dates, chopped into large pieces
1/2 cup almonds whole
4 tbsp fig/balsamic vinegar dressing (any kind of vinaigrette will work)

1. Combine all ingredients in a bowl and allow to sit for 20-30 minutes before serving.
