Meatless Monday – Chickpea Tomato Soup

Chickpeas are a great source of protein, among other things, but the taste is somewhat pronounced. The tomatoes in this soup do a great job of blunting the chickpea flavour, as the chickpeas help add a creaminess to the soup – a match made in vegan heaven!

Meatless Mondays – Thai Pumpkin Coconut Soup

I think this soup would be perfect for summer and could even work as a cold soup.  It’s on the sweet side because of the pumpkin, so if you aren’t a bit fan of sweeter soups then throw in a bit more spice and a pinch more salt to offset this.  I took this recipe from The Vegan Slow Cooker by Kathy Hester but I made it on the stovetop.

Meatless Monday – Spiced Lentil and Cauliflower Soup

My dad showed me this recipe in the Sobey’s grocery store flyer.  He even sent me a container along with the recipe so that I’d give him some to try – as a finders fee.  This warmly spiced but not spicy soup is great for winter.  And the lentils provide some great lean protein!

Meatless Monday – Creamy Butternut Squash Soup

Since going vegan I have become much more aware of where I’m getting my protein so I try to sneak it in any time I can.  This soup not only tastes delish but it packs a whopping 10g of protein per cup!  That’s pretty much equal to eating a serving of chicken (11g).  Not too shabby!
