My family used this recipe as a stuffing for our Christmas Turkey. A few minor changes and voila! It works just as well as a stand alone casserole!
Makes approximately 4 servings
1/2 red onion finely chopped
1/2 cup vegan margarine melted or canola oil
4 cups cooked rice
1/2 cup hemp seeds
1/4 cup ground flax seed
3/4 cup grated carrots
1 cup raisins
2 tsps sage
1 cup vegetable broth
1/2 cup almonds coarsely chopped
Salt and pepper to taste
1. Cook rice
2. Preheat oven to 350F
3. In a small pan add margarine/oil and onion and stir until onion just becomes transparent (approximately 3 minutes). Remove from heat and stir in sage.
4. In a large bowl combine margarine, sage and onions, cooked rice, hemp seeds, ground flax seed, grated carrots, raisins, and almonds. Stir until well combined. Add tofu and stir gently to mix through.
5. Pour mixture into a casserole dish and pour vegetable broth evenly over the casserole.
6. Cover and bake for 30-40 minutes or until dish heated through.
