Meatless Mondays – Fresh and Light Tomato Basil Pasta

Our backyard garden was very productive this year and I have found myself the proud owner of 7 lbs of fresh, organic tomatoes.  I will start to can some of them once they start to get a little soft, but for now my boyfriend and I are enjoying the fruits of our labour, literally.

Makes 2 servings

2 large fresh tomatoes chopped into large pieces
1/2 cup salsa
4-5 leaves fresh purple sage finely chopped
6 leaves of fresh spicy thai basil finely chopped (or regular basil)
1/4 cup almonds chopped in half
2 tbsp hemp hearts
2 tbsp chia seeds
2 servings rice pasta
1 tbsp olive oil

In a medium pot fill half way with water and add 1 tbsp olive oil.  Bring to a boil and cook pasta.
In a separate pot combine salsa, hebs, and almonds.  Stir until just warmed.
Add fresh tomatoes, hemp hearts and chia seeds and pasta.  Toss to coat.
Add salt and pepper to taste and enjoy! The almonds add a nice crunchy texture, but this could be achieved with almost any other nut.  I’d stay away from cashews because they are quite soft and will absorb the tomato juice quite quickly and become soggy.
