A few days ago I was on a baking spree and was going to make my adapted gluten free banana bread recipe but I feeling up for a little bit of kitchen experimentation. I was thinking, who doesn’t like peanut butter and banana together?
3/4 cup Peanut Butter
1/3 cup Honey
3 Bananas (thawed from frozen is okay)
2 Eggs (I use 2 tbsp ground flax seed and 6 tbsp water combined)
1 1/2 tsp Xanthan Gum
1 tsp Baking Powder
1 tsp Baking Soda
1 1/2 cup Brown Rice Flour
1/2 cup unsweetened chocolate chips (optional. you could also go with raisins or some other kind of small dried fruit)
Heat oven to 375 F.
In a mixing bowl combine xanthan gum, baking powder, baking soda and flour. Set aside.
Using a mixer (or a fair amount of elbow grease) combine peanut butter, honey, bananas and eggs.
Slowly add dry mixture to wet mixture, stirring until blended well.
Add in chocolate chips and stir until evenly distributed. At this point it is going to resemble cookie dough.
Coat a loaf pan in cooking spray, butter, or oil and scrape dough into pan I find that using a wet spoon will help you spread the dough and shape it into a loaf. This dough is super duper sticky.
Cook for at least 1 hour or until a knife put into the centre of the loaf comes out clean.
It is great on it’s own, with vegan margarine, but boy oh boy is it ever good with peanut butter on top!
