Oh. My. Goodness. These bars are amazing. Hard to believe that they’re gluten free and vegan! I adapted this recipe from “The China Study” cookbook. Melt-in-your-mouth delicious!\
1 cup steel cut oats (or cookie crumbs)
1/2 cup unsweetened shredded coconut
1 cup natural peanut butter
1/4 cup non-dairy milk (I used almond milk)
1 cup non-dairy chocolate chunks
5 tablespoons non-dairy milk
In a large bowl combine oats, coconut, 1/3 cup of natural peanut butter and 1/4 cup of non-dairy milk. Stir until well combined. Add more milk if it isn’t sticking together.
Press mixture into the bottom of a 9×9 pan lined with wax paper.
Warm remaining 2/3 cup peanut butter in a microwave on medium heat for about 1.5 minutes or until very soft and spreadable. Spread warmed peanut butter over oat and coconut mixure using a wet spoon to prevent sticking.
In a small saucepan melt chocolate and 5 tablespoons of non-dairy milk stiring constantly. Be patient. There’s no going back once the chocolate is burned. Medium heat is probably the highest that you’d want to go.
Pour melted chocolate over peanut butter and chill in the fridge for about 1 hour. Cut into squares and voila! Melt-in-your-mouth deliciousness!
