Gluten-Free Vegan Friendly Banana Bread

It took a little bit of experimentation to adjust my grandma’s recipe to be gluten-free and vegan friendly but it was well worth the wait.  I hope that you enjoy this as much as I do!

Ingredients:
1 1/2 cups Brown Rice Flour
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 1/2 teaspoons Xanthan Gum
2 eggs or egg equivalent (I used two tablespoons of ground flax seed and 6 tablespoons of water)
1 cup White Sugar
1/2 cup margarine or vegan margarine
3 Bananas (thawed from frozen is fine)
1 tablespoon Lemon Juice

1 – Preheat oven to 350F
2 – Mix flour, baking soda, baking powder and xanthan gum and set aside
3 – Combine eggs or equivalent, sugar, and margarine and beat until smooth.  Add bananas and lemon juice and stir by hand until just mixed in.
4 – Add flour to liquid mixture and process for about 2 minutes.
5 – Bake in a well greased 9×5 loaf pan for about an hour or until toothpick inserted into the middle comes out clean.
6 – Let cool on rack.  Enjoy with your favourite nut butter or on it’s own!
